Do You Like Butternut Squash?

I’m in my “I want to share a recipe” mode but fear that this one will not get any raves. Let me just say that you have to like butternut squash or you won’t appreciate this. We had it last night. Two-thirds of those eating it really like it. There were only three of us at the table and one of those was a teenage boy. Now you know who didn’t like it, but was gracious enough to try it anyway.

Amy’s Fall Butternut Squash

1 butternut squash, peeled, seeded and cut into 1/2 inch cubes
Salt to taste
1 tablespoon butter
1/4 teaspoon creole seasoning
1/4 teaspoon curry powder
1/2 teaspoon salt
1/4 cup brown sugar (dark or light)

In a medium saucepan, place the cubed squash. Sprinkle with salt and fill the saucepan with enough water to barely cover the squash. Bring to a boil, cover, and cook on low until fork tender (not too long). Drain.

In a medium non-stick skillet, melt the butter on medium-high heat. Pour drained squash into skillet, add seasonings and sugar and saute until sugar melts and squash is heated through.

Serve with BBQ’d chicken tenderloin strips, sauteed broccoli and jasmine rice. Enjoy! I would also try it with pork tenderloin and red cabbage or collards and black-eyed peas for your starch. Cornbread would be great with this combination.
