My Plans for the Weekend

Hey everybody, it’s Beans!

I think the picture to the left pretty much explains what I plan to do this weekend. While Amy cooks, cleans, does laundry, watches football with her boys and has her QT (quiet time) in the Word, I’ll just be resting. If it’s not too hot, I’ll join Amy and Rob on the back porch as they like to do when they can. I think that blue pillow really shows off my coloring.

I heard that you all are getting into the groove of Bible study and that you are turning into students of the Greek language. Also, I think it’s neat that you are able to go slower through Hebrews a chapter at a time and more than a week per chapter. Amy has more time to rub my head while we share a chair.

Sandra Burns (Amy’s Home Ec Ed mentor) made a yummy treat for you all yesterday at Bible study and she passed along the recipe for Amy to post, but Amy’s not here so I’m going to help her out and post the recipe now.


BLUEBERRY COFFEE CAKE

1 cup butter or margarine, softened
1 cup sugar
2 eggs
1 (8-ounce) carton commercial sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 (21-ounce) can blueberry pie filling
Topping (recipe follows)

Cream butter; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition; stir in sour cream and vanilla.

Combine dry ingredients; gradually add to creamed mixture, beating well after each addition.

Spread half of batter in a greased 13 x 9 x 2-inch pan; spread with pie filling, top with remaining batter, and sprinkle with topping. Bake at 375 degrees for 45 minutes. Cut cake into squares to serve. Yield: 15 servings.

Topping:

¼ cup all-purpose flour
¼ cup sugar
½ chopped pecans
3 tablespoons butter or margarine

Combine flour, sugar, and pecans; cut in butter until mixture resembles course meal. Yield: about 1 cup

Sandra, if you have a good recipe for doggie biscuits, I sure would enjoy making them…and eating them.
